My Book Review : 3.5 out of 5 stars! Callie (Calliope) has been trying to bring her life together ever since her divorce about a year ago, now she lands a job that could bring her photography career into the big time. Yet will Owen, the sexy bassist from the band she’s working with, add to her newfound happiness or brake everything she has worked so hard to accomplish?
I had never read this series before, but the authors have it set into their Oblivion Series’ world, and I had read a book or two from that “world” already, so I had a feeling I would enjoy this one. And I am happy to say I did enjoy it.

The Books I'm Thankful For (so far) in 2017
In tradition (well mine at least) of today being Thanksgiving Day (the USA version of it at least), here is a list of ALL the books I've read thus far this year that I've given my highest ratings to (5 out of 5 stars), which means I'm VERY Thankful for finding/reading them! Be forewarned though ... I moved a few months back and that has killed my reviewing schedule SO ONLY FOUR (4) of these books below have complete write-ups and reviews for them. The other novels I will HOPEFULLY have their COMPLETE book reviews posted soon (my goal is to get them in before the New Year .. *hahaa* wish me luck)! But anyways, here you go they are all listed in the order of when I read them this year:

- "Bedded Bliss" [Found in Oblivion Series, Book 1] by Cari Quinn & Taryn Elliott: 5 out of 5 stars!! Two acquaintances meet up unexpectedly in Vegas. After a night of partying and heavy flirtation they wake up to find they’re married yet have no memory of doing so. Both are from different upbringings and completely different worlds, but because of how he was raised Michael doesn’t want to get divorced and plans on assisting Chloe any way he can so their marriage will work. Will all of Michael’s plans fall into place, making it so Chloe, her son, and Michael can actually be a good family together? Or will others try to keep them apart for good?
This is the first really sweet rockstar romance novel that I’ve read in a while, and I am SOOO HAPPY that I found it! [Read more of Jess' Review and THREE TEASERS for this novel HERE] - "The Governess Was Wanton" [The Governess Series, Book 2] by Julia Kelly: 5 out of 5 stars!!! When Mary starts her latest job as the governess to the Earl of Asten's only daughter, she finds her world tilted of its axis by the Earl (Eric) himself. He's handsome, smart, and kind with a roguish streak the only seems to come out around her. They try to maintain distance between them but the night of the masquerade ball the distance becomes obsolete but only Mary knows the truth. Will Mary & Eric be able to have more than stolen moments together or will their ranks keep them separated forever?
This novel enamored me from the very beginning!! The illicit situation that brews between Mary & Eric is sweet and all consuming; it had me wanting their story to be never-ending. [Read more of Jess' Review and THREE TEASERS for this novel HERE] - "Shadow of a Girl" by Shannon Greenland: 5 out of 5 stars!!!! Eve (Nesiah) has spent her life as a shadow of her true self in hopes of staving off the emotional and physical abuse she dealt with daily from her "father." Therefore, after confessing to her longtime friend about the abuse she received they device a plan to get Eve to escape. Once Eve ran away, she hides behind a false identity as a roadie and ends up meeting West (a famous lead singer). Over time, West breaks through Eve's defenses and their friendship turns into something more ... but soon Eve's past and the lies she's kept hidden come to light and might breakup the best things she's ever known. Will it all be too late to save her?
This intense YA rockstar romance had me riveted from the very beginning. I loved the innocent passion Eve shares with West and how empowered Eve becomes throughout this whole novel. [Read more of Jess' Review and TWO TEASERS for this novel HERE] - "Royally Roma" [The Royals Series, Book 1] by Teri Wilson: 5 out of 5 stars!! After feeling beaten down by his own royal responsibilities, Niccolo (Nico/Mano) the heir to the Lazaretto throne decides on escaping his gilded cage by pretending to be someone else when he meets Julia. Julia is an American tour guide living in Rome, who is running from her own notorious past and is in the midst of pulling her life together when she meets Niccolo. Their attraction is instantaneous and is blooming into something more by the minute. Yet when Niccolo’s “quick getaway” turns into something a whole lot more and into a bigger fiasco then he originally planned, will he still be able to go back to his “real” life after all is said and done; or will he be able to change his life for the better with the help of Julia by his side?
Okay truth time … this novel is said to be a modern retelling of the classic Audrey Hepburn film ‘Roman Holiday,’ and though I have heard of it I have never watched it so I really didn’t know what it was about. Yet I can definitely say I was not disappointed in the least as I was hooked by Chapter 2. [Read more of Jess' Review and TWO TEASERS for this novel HERE] - "Undeniable" [The Always Series, Book 3] by Cherie M. Hudson: 5 out of 5 stars! Yes, Caden loves his cousin like a brother and would do anything he can for his cousin’s family (and has on more than one occasion) but that isn’t the real/only reason he travels whenever he could to San Diego, California during his time off from his university in Australia. The real reason is because of his cousin’s sarcastic, snarky, big hearted sister-in-law Chase (Chastity). He has been in love with her from just about the beginning of their “relationship” now he just has to prove it to her any way he can. But while Chase tries to keep him at bay others conspire against them, will Caden’s actions be enough to win her heart for good or will he fumble up any chance they have of being together?
I really liked this contemporary new adult romance that is written in a diary style kind of way. It was easy to follow along (as this is the first novel from its Always Series that I’ve read) and I enjoyed how it gave the reader a way of viewing/learning about Caden and Chase’s thoughts on WHY they did the things they did throughout the novel. All in all... [Read more of Jess' Review and TWO TEASERS for this novel HERE] - "Sweet Southern Trouble" [Harmony Homecomings Series, Book 4] by Michele Summers: 5 out of 5 stars!! Under the pretense of getting Nick (Nicholas), the head coach of the North Carolina Cherokees, to allow her access to his team for her school's planned bachelor auction Marabelle (Tinker Bell/Mary-bell/Thumbelina) agrees to his ruse of being Nick's fiancee. However, every time Nick and Marabelle are together, sparks fly and they quickly find there relationship progressing rapidly and into something VERY real. That is if Marabelle can get over her own securities, Nick can get over his past, and if some one from Nick's recent "past" doesn't get in the way....
Wow!! Out of the three novels I've read in Ms. Summers' Harmony Homecomings Series (Book 2, 3, & 4) THIS one is beyond far my favorite!!! Especially since... [Read more of Jess' Review and TWO TEASERS for this novel HERE] - "Beyond the Stars" by Stacy Wise: 5 out of 5 stars!! Jess’ (Jessica) dream has always been to live in France and speak fluent French. However, that all changes after she has to give up her year abroad because of getting mono. So, if she wants to stay in LA she is stuck helping out her Aunt by becoming a personal assistant for Jack, a popular leading actor. They don’t have a good beginning at all but overtime they let each other into their worlds and overtime they seem to fall for one another. But could it all be too good to be true or are they actually “soul mates”....
This passionate sweet romance wins over its readers with endearing characters that make you want to either be them OR want them to be your friend! I fell in love with Jack right alongside Jess. But when a ghost finds her and brings her to men who might be able to help protect her, she finds the courage to take it upon herself to make a new future for them all. Now they just have to be sure to defeat their common enemy (her father) before he rips their lives apart even more…
Can I just say now what I’ve been thinking since I finished this novel … which is, “NOOOOOOOOOOOOOOOOOO!!” Why Ms. Davis, did you do this to me?! I am on Ms. Davis’ newsletter list and when she was pimping this novel (Marked For Them) it left me REALLY intrigued. Therefore... Continuing right where “Dark Lover” ended, we now follow Rhage. Yet will he be able to handle the repercussions that come with finding the woman who was meant for him?

- "Blocked" [Blocked Series, Book 1] by Jennifer Lane: 5 out of 5 stars!! Dane & Lucia (Luz) are in a unique situation. Dane’s mother and Lucia’s father are BOTH Presidential Candidates to become the next President of the United States. And because of a scandal at Lucia’s original college they are now attending the same college on volleyball scholarships. This forced proximity has Pros and Cons, which they end up dealing with along the way, but once Lucia’s true feelings come out for Dane both of their worlds change. But will it be a better change for everyone? That still remains to be seen …

- "A New Leash on Love" [Rescue Me Series, Book 1] by Debbie Burns: 5 out of 5 stars!! A man (Craig) who is still coming to terms with the devastating loss that happened in his life years ago takes his daughter’s puppy to a local animal shelter at the wishes of said daughter and his ex-wife. From that moment on his life becomes unexpectedly intertwined with Megan, the Director of the animal shelter. Yet, especially with them both being so different, are they ready to try making something of their budding relationship or will fate take the choice out of their hands?
Enchanting from the start with Craig and Megan’s sparking chemistry and intense banter. Though I think what might have really hooked me was Sledge within the first chapter, I love him! So, in hopes of a winter wonderland Christmas they head to her in-laws house in Montana where they find that everyone seems to be needing a bit of holiday magic....

- Katana (Kat) & Klement (Klem) [from "With Vengeance" [Hearts of Metal Series, Book 2] by Brooklyn Ann]: Kat and Klement's attraction and chemistry fly off the pages. In addition, their relationship hooked me from the start...
- Nerienne & Durgan [from "Dream Singer" [The Dream Chronicles, Book 1] by J. A. Ferguson]: Together they make one grand couple (two pieces of a whole) that could rule all if only they'd allow it. I LOVED their banter! ♥
- Leigh & Ian [from "Let Us Prey" [Wild Operatives Series, Book 2] by Vivienne Savage]: Even though when Ian first sees Leigh he recognizes her as his mate, it was the gradual way they went about getting into a relationship that made me really like them as a couple.
- Maggie (Margaret) & Camden [from "Masquerade" [Scandalous Ballroom Encounters Series, Book 1] by Victoria Vale]: Maggie is a fun character, sweet yet daring, understands her position in life but willing to take a chance. I found her very cool. Then throw Camden at her and WOW, the words burn off the pages because of the passion between them.
- Trixie (Trix) & Dakota [from "The Good, the Bad, and the Vampire" [Dead in the City Series, Book 4] by Sara Humphreys]: I loved the odd combo of Trixie and Dakota together. With her being a punk rock chick and him being a “good ole boy” cowboy it was interesting and charming to see how they put up with being bloodmates. ♥
- Olivia & Joseph [from "The Sheikh's American Daughter" by Kate Goldman]: I enjoyed the push-and-pull relationship that Olivia has with Joseph. I liked how he won her over even when she never really gave in.
- Lana & Adam [from "Moonlight" [Moon Series, Book 1] by Lisa Kessler]: With Lana’s sass and Adam’s charming determination the sparks flew and ignited the urge for me to keep reading their novel...
- Emma & Cameron (Cam) [from "The Bad Boy's Baby" [Hope Springs Series, Book 3] by Cindi Madsen]: As a family Cam, Emma, and Zoey were as cute as can be. While Cam & Emma worked well together and seeing their relationship grow delighted me. It was easy to root for them.
- Cassandra & Rafael (Rafe) [from "Bite at First Sight" [Scandals With Bite Series, Book 3] by Brooklyn Ann]: They have an intriguing bond from the very beginning. A hot, steamy, and feisty connection encourages you to root for them too. I loved how these two fought for one another... ♥
- Melody (Mel) & Christian [from "Fall With Me" [Sixth Street Bands Series, Book 2] by Jayne Frost]: They are such a great pair that I wish I could get to read more about them somehow. Their novel is a “nerdy” rockstar romance and they make it just so sweet.
- Amanda (Mandy) & Dustin [from "Love in Bloom" by Delilah Devlin]: They are cute and captivating in their sweet erotic romance! I wish I could have read more about them.
- Henrietta & Simon [from "The Earl's New Bride" [The Daughters of Amhurst Series, Book 1] by Frances Fowlkes]: They captivated me. They they fit each other perfectly in the way they looked at the world and tried to unintentionally protect one another.
- Eve (Nesiah) & West [from "Shadow of a Girl" by Shannon Greenland]: I loved the innocent passion Eve shares with West... They were/are meant for one another!! I LOVE them together as they match up so well. ♥
- Ainsley & Zane [from "Bump in the Night" by Dakota Rebel]: I LOVED Ainsley’s relationship with both Zane and Kate! Zane seemed like Ainsley’s perfect half, plus he’s described as a handsome vampire who was also sweet and charming, while Kate was just a sweet girl who Ainsley and Zane unintentionally grew to love and wanted the best for her future.
- Rayna & Kabril [from "King of Prey" [King of Prey Series, Book 1] by Mandy M. Roth]: Together they were a unique pair, a pair that becomes a united front against anyone wanting to separate them while bringing out a lightheartedness into each other’s lives.
- Leila & Alix (Alixander) [from "An Heir Fit for a King" [One Night With Consequences Series, Book 13] by Abby Green]: They were so right for one another in their novel, that no matter how much they lied I still liked them. Their strong personalities are what kept me riveted to their novel. I couldn’t see one without the other.
- Mary & Eric [from "The Governess Was Wanton" [The Governess Series, Book 2] by Julia Kelly]: They were perfect for one another. And how Mary just seemed to fit into Eric and his daughter's lives was so seamless that it only took putting down "the rival" to make everything work for them. ♥
- Taylor & Joe [from "Burning for You" [The Man of the Month Series, Book 2] by Michele Dunaway]: I just wanted to keep reading about these too! Together I found both Joe and Taylor to be two stubborn fools, but so alike that I did not want to see them apart from one another either.
- Amara, Seth, & Tristan [from "An Immortal’s Song" [Dante’s Circle Series, Book 6] by Carrie Ann Ryan]: Amara, Seth, & Tristan are an undeniably cute and spicy couple!! They are opposite and matching in so many different ways that I cannot see them working without one another.
- Rachel & Adrian (Noah/Hawk) [from "Hawk's Revenge" [Lone Pine Pride Series, Book 3] by Vivi Andrews]: Sizzling, hot, and passionate. Their relationship sets this novel one cut above the rest with the dynamic ways these two came back together. I’m amazed by how it all worked out for them! ♥
- Summer & Evan [from "Catching Summer" [Second Chances Series, Book 6] by L. P. Dover]: Their relationship was inevitable and charming. I loved the way Evan finally won Summer over and his possessive ways of caring for her. They were hotly sweet together.
- Mackenzie (Mack) & Landon [from "Fool Me Twice" [If Only . . . Series, Book 1] by Mandy Hubbard]: They are a perfect couple full of playful banter with tons of pranking.
- Xia, Rahal, & Cal [from "Bad Kitty" [Chronicles of the Malcolm Series, Book 2] by Teresa Noelle Roberts]: Silly, spontaneous, crazy in some instances, but with secret tender sides, all three are so perfect for one another that I was rooting for them from the beginning. ♥
- Jules (Julia) & Alex [from "The New Guy (and Other Senior Year Distractions)" by Amy Spalding]: Even though they seem like an unusual match and to me they still do, it was Jules' intensity and naiveté along with the way Alex seemed to appreciate her major quirks that had me rooting for them. They are both odd ducks in a way that just works.
- Katie & Vance [from "Sweet Southern Bad Boy" [Harmony Homecomings Series, Book 3] by Michele Summers]: They both have a vivacious quality about them they was compelling to read about... I liked how both Vance and Katie turned around their circumstances, which from my perspective made them both very powerful characters.
- Chloe & Michael [from "Bedded Bliss" [Found in Oblivion Series, Book 1] by Cari Quinn & Taryn Elliott]: I loved how Michael pretty much worshipped Chloe. I mean they might not have known each other that well before Vegas but I loved how their relationship came together and how Michael was determined to make a go of them together no matter what. ♥
- Marne & Asher [from "A Veil of Secrets" [Araneae Nation Series, Book 5] by Hailey Edwards]: I enjoyed the subtle romance that blooms between Marne and Asher. It was very sweet.
- Alexandra (Alex), Zain (Darkness), Darren & Tork [from "Her Stepbrothers Are Demons" by Trinity Blacio]: Alex is a strong-willed woman with a soft heart, which makes her the perfect counterpart to Zain (Darkness), Darren, & Tork's restless "demonic" ways.
- Sofia & Mal (Malachi) [from "Fighter" [Wolves of Angels Rest Series, Book 9] & [Mating Season Series, Book 36] by Elsa Jade]: While finding out how their backstories had interesting similarities was charmingly fated, in a way. It was both of their underlying sweetness to others (at least to those who mattered) that I couldn’t help but enjoy.
- Dara & Matthew (Matt) [from "The Virgin Cowboy Billionaire’s Secret Baby" by Lauren Gallagher]: Watching them fall in love without realizing it was happening was pretty special. Also, I appreciated how the arguments in their novel were between everyone else yet not between them. No that doesn't mean that they had the "perfect" lives/relationship, but it showed how committed they were to each other; it was them against everyone else. So sweet!! ♥
- Claire & Adam [from "Prodigal" [Maelstrom Chronicles, Book 3] by Jody Wallace]: I enjoyed how prickly Claire was, with her being her vivacious-self. I loved how Adam seemed to calm her down in a way to make her see the “bigger picture” of it all while opening up her heart too.
- Ella & Tony [from "A Moment to Dance" [Whistle Stop Series, Book 2] by Jennifer Faye]: I appreciated the way Ella and Tony’s relationship slowly built and how their mutual understanding turned into something worth wild.
- Erica & Tito [from "The Greek Tycoon's Tarnished Bride" [Men of the Zodiac Series, Book 10] by Rachel Lyndhurst]: Together these two opposites brake through each other's barriers enough to form a bond that has the possibility to last a lifetime if only they are willing to go the distance for each other.
- Lindi & Kade [from "Under Her Skin" [Shifter Shield Series, Book 1] by Margo Bond Collins]: As their were-animals are sworn enemies, finding that Kade happens to be Lindi biggest ally is intriguing in more ways than one. Then add in their combative attraction seems to set the pages on fire and me wanting to read more about this dynamic duo. ♥
- Jilly, Chris S., & Chris P. [from "Merry "Chris" Mas" [The Love Play Matchmaking Service Series, Book 1] by Clare Dargin]: Together they were the “soul mates” that the matchmaking service said they’d meet. I liked how the Chris’ already had a shared past that made their relationship more believable.
- Rose & Silas [from "For the Sake of the Children" [Leadville, Colorado Series, Book 5] by Danica Favorite]: As the relationship that they shared was one that would last through just about anything IF they planned to stick it out no matter what.
- Astrid & The Duke of Montford (Montford, Monty, Cyril) [from "The Duke's Holiday" [Regency Romp Trilogy, Book 1] by Maggie Fenton]: While finding out how their backstories had interesting similarities was charmingly fated, in a way. It was both of their underlying sweetness to others (at least to those who mattered) that I couldn’t help but enjoy.
- Kate (Katie) & Syon (The Marquis) [from "Rock Me Two Times" [Rock Band Series, Book 1] by Dawn Ryder]: *happy sigh* Intense seems to be the word for this couple’s book review and it goes perfectly for this couple too. They are combustible. ♥
- Isabel & Ford [from "Three Little Words" [Fool's Gold Series, Book 12] by Susan Mallery]: Because of how charismatic and quirky this couple is together, I was very intrigued by their Happily Ever After.
- Hannah & Ben [from "This Book Will Change Your Life" [Arlington Series, Book 1] by Amanda Weaver]: I liked how Ben & Hannah’s relationship unfolds while showing the struggle they both have trying to please their families and the difficulties that ensue through it all.
- Emma & Flynn (Henry) [from "Viscount of Vice" [Covent Garden Cubs Series, Book 0.5] by Shana Galen]: Their connection is instantaneous and combustible. Plus, I loved any of the scenes where Flynn and Emma were together.
- Peyton & Justin [from "The Natural History of Us" [The Fine Art of Pretending Series, Book 2] by Rachel Harris]: They may look like opposites, because of their family backgrounds and where they live, but at the core of who they are, they seem to have a lot of similarities. It made me happy to see them coming together after so long being apart. ♥
- Risa & Linc (Lincoln) [from "Caged Magic" [Wing Slayer Hunters Series, Book 5] by Jennifer Lyon]: Together they steamed up the pages of this novel and kept me wanting to read even more about their growing relationship. I was envious and smitten by what they shared together.
- Abby & Nathan [from "Abby and the Cute One" [Backstage Pass Series, Book 5] by Erin Butler]: Their relationship is written in a way that is so sweet I felt like saying, “Awwww,” within most of their scenes. It has that sweet romance teen factor that can charm you from the beginning and leaves you wanting more.
- Shayla & Kade [from "Bear's Secret Baby" [Emerald City Shifters Series, Book 3] by Kit Fawkes]: I liked how their irritation grew into a soft respect and into something more. The reason behind them being mates was reasonable and definitely, a unique take on that type of situation. ♥
- Rebecca & John [from "Never Resist a Rake" [Somerfield Park Series, Book 2] by Mia Marlowe]: While in ways they seem like an unconventional pair as they say like goes to like ... and they have more similarities than expected. A perfect match!
- Aoife & Kostya [from "Dragon Fall" [Dragon Falls Series, Book 1] & [Dragon Septs Series, Book 11] by Katie MacAlister]: They are one fated pair that seemed to be resistant of the match in the beginning. But it was because of their resistance that made you want to root for their relationship even more, especially since fate is never wrong.
- Chloe & Ryan [from "Once Upon a Power Play" [Risky Business Series, Book 2] by Jennifer Bonds]: Ryan and Chloe MADE me sit down and notice them. With Chloe’s flare and Ryan’s All-American Boy sweetness, I couldn’t stop being emotionally invested in this novel, laughing one moment and getting teary eyed during the deep scenes. ♥
- Rebekah & Joshua [from "An Amish Match" [Amish Hearts Series, Book 2] by Jo Ann Brown]: I found Joshua and Rebekah’s relationship to be a sweet hesitant romance that was enjoyable to witness as their love grew for one another. They captivated me with their love story. I’m so happy they got together!
- Bennett & Linc (Lincoln) [from "Baby's Got Bite" [Take It Like A Vamp Series, Book 2] by Candace Havens]: They were a hilariously charming couple! Their relationship made this novel a compelling read. LOVED them together!
- Felicia & Kedah [from "The Sheikh's Baby Scandal" [One Night With Consequences Series, Book 23] by Carol Marinelli]: While both Kedah and Felicia are very domineering, I find it intriguing in the way their relationship grew from co-workers to lovers with the possibility of something more. I couldn’t get enough of them as a duo. ♥
- Abigail (Abi) & Elijah (Eli) [from "Breaking Him" by Sherilee Gray]: It was so SWEET how Elijah handled Abigail, he's definitely a gentle giant at least when it comes to her.

My Book Review : 5 out of 5 stars!! Two acquaintances meet up unexpectedly in Vegas. After a night of partying and heavy flirtation they wake up to find they’re married yet have no memory of doing so. Both are from different upbringings and completely different worlds, but because of how he was raised Michael doesn’t want to get divorced and plans on assisting Chloe any way he can so their marriage will work. Will all of Michael’s plans fall into place, making it so Chloe, her son, and Michael can actually be a good family together? Or will others try to keep them apart for good?
This is the first really sweet rockstar romance novel that I’ve read in a while, and I am SOOO HAPPY that I found it! Though I feel that Ms. Quinn & Ms. Elliott need to put together some type of “family tree” for the band (if they haven’t already) just to keep everyone’s backgrounds straight, I did not feel lost at all in this novel and it kept me entertained the whole way through, with an intriguing plotline and characters (main & secondary) to boot!
Both Michael & Chloe are intense and driven people, so much so that they have a hard time listening to one another in the beginning but it makes their banter and their story that much more fun! I loved how Michael pretty much worshipped Chloe. I mean they might not have known each other that well before Vegas but I loved how their relationship came together and how Michael was determined to make a go of them together no matter what. I was charmed! In addition, I adored how the ending played out making it so they had a situation to deal with and to triumph over instead of one of them accidently hurting the other. As I said above, it made me all so happy. *hehee*
I HIGHLY recommend this novel to those looking for an awesome rockstar contemporary romance!

- Ingredients :
- One 8oz. container of Cool Whip
- One 14oz. can of Sweetened Condensed Milk
- 1/3 cup of Lemon Juice
- One Graham Cracker Crust
- Directions :
- Mix all ingredients together in a medium bowl. When evenly mixed, pour into graham cracker crust. Cover and chill for 1 hour.

For me, nothing says summer like a fresh fruit pie! My pie I've chosen for this bake-off has fresh raspberries, blueberries (a NJ fruit), strawberries and blackberries. YUM!
I admit that pie crust usually intimidates me, but the recipe for the crust that is included is super easy (especially if you have a food processor) and is great to work with since it rolled out really nice and even. And that rarely happens for me, so I will definitely make this crust again!
**I made the pie dough a day before to make it more simple for me.

- Ingredients :
- Pie Crust :
- 2½ cup flour
- 1 cup cold butter, cubed
- 1 tsp salt
- 1 tsp sugar
- 6 to 8 tbsp ice cold water
- Filling :
- 5 cups of mixed berries, sliced strawberries, raspberries, blueberries
- ¾ cup light brown sugar
- ¼ cup cornstarch
- 1 tsp orange zest
- ½ tsp vanilla extract
- 1 egg white for egg wash
- Instructions :
- Place the butter in freezer for 20 minutes.
- In a food processor add the flour, salt and sugar and pulse a couple times.
- Add the butter to the food processor and pulse a few times until the mixture resembles peas. Add the ice water one tablespoon at a time and continue pulsing. The dough should start to hold together.
- Remove dough from food processor and place it over your working surface. Form the dough into 2 discs, cover in plastic wrap and refrigerate for at least one hour up to 2 days before using.
- Preheat oven to 425 F degrees. Coat a deep-dish pie crust plate with nonstick baking spray.
- Place berries in a large bowl. In a small bowl combine brown sugar, cornstarch, orange zest and extract; mix well. Add to berries; toss to coat.
- Take out the pastry discs from the fridge and roll out a disc so that it's 12 inches in diameter and place it and arrange in your pie dish. Brush the pie crust with egg white so that it doesn't get soggy.
- Pour the berry mixture into the pie crust.
- Roll out the other disc so that it's 12 inches in diameter as well and cut it into lattice strips. Arrange the lattice strips nicely over the berries and brush with remaining egg white.
- Bake for 45 minutes or until golden brown.
- Let it cool before serving.

- Ingredients :
- 9"x11" glass baking dish
- 1 1/2 c semi-sweet chocolate chips (divided into 2)
- 2 tsp milk
- 1 T corn syrup
- 1/2 c confectioners super (divided into 2)
- 1 c butter or margarine + 2 T
- 12 oz whipped topping (i.e. Cool Whip)
- 1 c peanut butter
- 1 c brown sugar
- Graham cracker crust
- Layer 1 - The Crust :
- Prepare baked graham cracker crust per directions on packaging. Set aside to cool. (Feel free to use a standard pie crust or Oreo crust - all work great for this recipe!)
- Layer 2 - Chocolate Base Layer :
- Melt the following in a small saucepan: 3/4 c chocolate chips, 1 T butter, 2 tsp milk
- Add 1/4 c confectioners sugar
- Stir/blend
- Remove from heat and spread chocolate sauce over bottom of crust. Set aside to cool completely.
- Layer 3 - Peanut Butter Filling :
- Melt 1 c butter in microwave, then stir in 1 c brown sugar
- Allow to cool for 10 minutes
- Pour mixture into blender and stir in 1 c peanut butter until well blended
- Fold in 12 oz whipped topping
- Pour filling over cooled chocolate layer
- Layer 4 - Chocolate Topping :
- Melt the following in a small saucepan: 3/4 c chocolate chips, 1 T butter, 1 T corn syrup, 1/4 c confectioners sugar
- Mix well
- Spread carefully over the peanut butter layer
- Refrigerate until cool (great frozen as well!). Cut and serve!
This pie crust recipe is simple, but the trick is the prep. You don't want to over-mix & the time in the fridge is essential to making the flakiest crust. (Also, credit for this crust goes to my neighbor from my hometown, Luella Crowther. It was the first time I ate all the crust on my piece of pie, because YUM!)
- Ingredients :
- Pie Crust :
- 2 C flour
- ** 1 C butter (softened enough to work with)
- ** shortening also works
- 1/2 C water
- dash of salt
- Add butter to flour and work in by hand until you have pea-sized bits. Scatter liquid over surface. Stir until just mixed with a fork and roll into two dough balls. Place balls in plastic wrap, pull up edges and press dough into a disk. Refrigerate for at least one hour before rolling out. (Fridge up to 5 days, freeze up to 3 months)
- Pound bottom crust dough with rolling pen. Roll out and form into pie pan.
- Filling :
- 1 Can of cherry pie filling (I search for the kind without corn syrup, because allergy fun!)
- 1 tsp vanilla
- 1 tsp almond extract
- 1 T sugar
- Mix and put on the bottom crust. (Fair warning, I like my cherries on the sweeter side with a little tart. If you prefer more tart, skip the sugar & vanilla)
- Roll out second crust & cover. Flute edges & put in vent holes. Cover edges with foil, so they don't get too done. Bake at 375 for 45-60 minutes.

Cindi Madsen is a USA Today Bestselling author of contemporary romance and young adult novels. She sits at her computer every chance she gets, plotting revising, and falling in love with her characters. Sometimes it makes her a crazy person. Without it, she’d be even crazier.
